Chilli Chicken


For dinner tonight, I cooked one of my specialty dish, chilli chicken. It is a very simple and colourful dish. It really lighten up the table. My boyfriend loves this dish....!



Chilli Chicken
Ingredients:
4 boneless and skinless chicken thigh
1 egg white, lightly beaten
1/2 tsp salt
2 tbsp cornflour
4 tbsp vegetable oil
2 garlic cloves, crushed
1cm piece fresh ginger root, grated
1 red pepper, deseeded and diced
1 green pepper, deseeded and diced
2 fresh chillies, chopped
2 tbsp light soy sauce
1 tbsp Chinese cooking wine/dry sherry
1 tbsp white wine vinegar

Method:
1. Cut the chicken into cubes and put in a mixing bowl. Add the salt, egg white, cornflour and 1 tbsp oil. Coat the chicken well.
2. Heat 2tbsp oil in a preheated wok. Add the chicken pieces to the wok and stir fry until golden brown. Take out the chicken.
3. Heat the remaining oil and stir fry the garlic and ginger until fragrant. Add in the chicken.
4. Stir in the peppers, chillies, soy sauce, Chinese cooking wine/dry sherry and white wine vinegar. Cook for a further 2-3mins until the chicken is cooked through.
5. Transfer to a serving plate and serve immediately.
